Tequila Pasta

Legend has it that tequila's origin is due a lightning bolt sent down by the Gods.

The bolt struck a spiny like cactus plant that resembles a giant pineapple, and split the heart of the plant open cooking the sap. This plant is the blue agave, the source for the nectar of the Gods - Tequila.

Brown onions and add minced meat with two shots of tequila. Cook mince until half done and add another two shots of tequila. Add chopped chillies, garlic, salt and fresh ground black pepper and parsley - you can also add any other dried or fresh herbs like basil, oregano. Add another two shots of tequila when minced meat is thoroughly cooked. Add tomato paste with mustard and a shot or two of tequila. The idea is to eventually cook away the tequila while at the same time it cooks into the meat and the sauce. You can also add about two tots of red wine to the meat and sauce. Don't let the meat cook dry - add water if you have to - also, have a thick sauce with the meat. Mix meat and pasta together - and enjoy!

** It is a common misconception that Tequila bottle contains a worm. Actually, it is a butterfly larvae that is Mezcal, not Tequila.

Always treat alcohol stains ASAP! Often stains are almost colourless at first, but turn brown on standing, washing and ironing. Fresh stains can be removed by sponging several times with warm water.

Cooking Instructions:
In a pot heat up butter and oil on medium high. Add bacon, onion and garlic and cook until golden about 3 minutes or less. Add the tomatoes and parsley to the bacon, onion and garlic and cook for 10 minutes. Add the cognac and make a flambé (light alcohol in pot with long match and stir until flame goes down). Don't forget to wear your asbestos mitts and turn off the smoke alarm. Add the Half & Half and cook for another 5 minutes on medium low. Start cooking the pasta for as many minutes as it requires. When pasta is done mix with sauce and serve. All those "Half's" did make a whole!
