How to Smell Greek
Tsatsiki

From the Smelly Gourmet section of The Messy Gourmet Cookbook

My Greek hairdresser, Bill, tells me that in the old country he used to eat a full bowl of tsatsiki as a meal. The key to good tsatsiki, according to Bill, is to use quality, thick yogurt (not low fat) and to grate the cucumber bits such that you can still feel the crunch in the dip.

  1. Remove the seeds from the cucumber and grate coarsely.
  2. Add some salt and let sit for about 10 minutes. Squeeze out the excess water.
  3. Press or finely chop the garlic cloves.
  4. Mix all ingredients with the yogurt and let sit in the fridge for at least one hour.
Serve with veggies or toasted pita wedges.

Stains:Cucumbers don't stain!
